Oh, I totally agree. I actually make a butternut squash pie. No canned stuff here. Hand rolled crust too.
I think the problem was that my squash was a little big (I usually use a couple of small squash instead of one big one) Also, I didn't roast the squash quite as long as I usually do which is where I think I really flubbed.
the crust was actually very successful though. Crissa made it and we used ghee instead of butter or shortening. Very crisp and golden and flakey. That's why I was disappointed with the squash.
